Nicole's Raspberry Protein Blondies
Nicole Frain from Clean Treats has sent through another fantastic recipe. This time it's a delicious low-carb, high protein Raspberry Chocolate Blondie :) These bad boys make a perfect low carb snack to go with your coffee and satisfy that craving for something a little bit sweet.
1 packet (340g) Protein Muffin Mix 4 whole eggs 60g butter or coconut oil melted 100g organic white chocolate 1tsp vanilla essence 1/2 cup of milk 2 handfuls of raspberries Cacao nibs and coconut to top (optional)
Set your oven to 180 degrees celsius Combine the entire muffin min, eggs, coconut oil/butter, chocolate, vanilla essence, milk and stir well. Fold in two large handfuls frozen raspberries. Pour into a lined square brownie tin. Sprinkle with cacao nibs, raspberries and coconut flakes Bake for 45 minutes until set in the centre. Allow to cool slightly before removing from your tin and cool completely on a wire rack
