Kiwi Coconut Pancakes

--Pancakes 1/4 cup (30 g) of Protein Pancake Mix 1 large egg 50 mL milk of your choice (we use almond milk) --Toppings 1 Large Kiwi Fruit 50g Coyo (AU) or Raglan (NZ) Coconut Yoghurt 1 Tbs Shredded Coconut 30g Lindt (or Whittaker's) 90% Dark Chocolate

--Pancakes Combine all the ingredients in a bowl. Using a whisk, mix thoroughly. Let the mixture sit for 5 minutes to thicken slightly. Frying Pan Preparation: Lightly spray a frying pan with oil. Heat until almost smoking – this seals the pan and prevents sticking! Once hot, turn to a low heat and wait for 30 seconds. Spoon the mixture into a non-stick pan on a low heat, forming 1 long South Island and 1 shorter North Island Once bubbles appear, flip each pancake and cook for an extra 30 seconds or until golden brown. --Topping Arrange the pancakes on a long plate and cover with the sliced kiwi fruit. Add the Coconut Yoghurt along the centre of the Islands. Sprinkle with the shredded coconut and crumbled dark chocolate. Enjoy :)
