130g Protein Pancake Mix 160g Egg White OR 3 Whole Eggs 5 Chopped over-ripe Bananas (approx. 550g) 200g Almond Meal 70g Shredded Coconut 2 tsp GF Baking powder, sifted to ensure no lumps 1 tsp Cinnamon 1 tsp Nutmeg Sprinkle of Cardamon 3 tsp Vanilla Essence Banana slices for decoration --Equipment 1 Large Mixing Bowl 1 Loaf Tin – Measuring approx. 9cm x 9cm x 24cm An Oven --Additional note: Feel free to play around with additions – Walnuts, Raw Cocoa, Pepitas, Blueberries!

Preheat the oven to 170 degrees celsius Roughly chop/mash all the bananas In a large bowl, combine all ingredients. Mix well to ensure there’s no lumps Let sit for 10 minutes, stirring occasionally Pour the mixture into a baking paper lined loaf tin Decorate with banana slices as desired Bake for 20 minutes, rotate the loaf, cover with foil and bake for a further 20 minutes Enjoy!
