Extra Seedy Protein Bread Recipe

This beautiful variant of our Protein Bread recipe is packed full of seedy goodness. It adds some more weight and a great texture to the regular Protein Bread loaf. This recipe has been put together by Maddie from Mad For Gluten Free. She has tons of delicious gluten free (and often dairy and refined sugar free) recipes on her website. 9 servings

1 ½ – 2 cup (250-300g) Seed Mix (sunflower, pepita, chia, pumpkin etc) 2 cup (170g) Protein Bread Mix 1 sachet (8g) Yeast Sachet 1 cup (220ml) Luke Warm Water -- Note: This recipe does contain yeast, but if you are allergic or would prefer not to add it that is fine. It has been added to provide some extra lift to counteract the extra weight of the seeds.

Preheat oven to 180°C and grease or line a loaf tin. Combine all the dry ingredients in a medium mixing bowl, adding the water and stirring until combined. Cover bowl and place in a warm area to allow to thicken/rise for 15 minutes. If mixture becomes to thick gradually add small amounts of water and continue to stir (skip this step if you aren’t using yeast). Pour the mixture into the loaf tin and bake for 45 - 50 minutes, or until cooked through. Allow to cool thoroughly before slicing and serving.
