Alex’s Mini Mince Protein Pies

We LOVE when our customers get creative, and Alex recently posted a photo of these delicious Mince Protein Pies, made with Protein Bread Mix pastry! We couldn’t help but get the recipe and share it with you all! Enjoy this Australian classic, with a protein packed crust!

-- Pie crust 1 cup Protein Bread Mix 1 cup Almond Meal 2 eggs 1 tbs Oregano (fresh or dried) -- Mince Mixture 1 tbs minced garlic 1/4 Spanish onion chopped 500g lean beef mince 2 tbs mixed herbs 1/2 tomato chopped Salt and Pepper to taste

Preheat the oven to 200ºC Heat a pan over medium heat, and add mince and onionCook until browned. Add mince, herbs, tomato and salt and pepperCook until the mince has browned, then move to the side to cool. Mix the Protein Bread Mix, almond meal, eggs and oregano in a medium sized bowl until combined and thick. Taking a small amount in your hands, flatten the mix into a disc and press into a cupcake/muffin mould (preferably silicone)Ensure the bottom and edges are nice and thin. Repeat until all the tins have crust in them and there is a small amount left in the bowl to make lids (you want to use approximately 2/3 for the base, and 1/3 for the lids). Place the tin in the oven for 5 minutes, or until the crust has started to brown and rise. Take out the tin, and spoon in some mince filling until it fills the pie crust. Using the leftover mixture, flatten the dough into small disksPlace these over the top of the mince, pressing the edges together to seal the pies closed. Put the pies back into the oven until the top has started to become golden. Remove the pies from the oven, and take the pies out of the moulds Place on a flat baking tray, putting it back into the oven to continue browning on the outside. Enjoy with a salad, or with some tomato sauce for a healthy version of an Australian classic!
