Ingredients: 1 cup Almond Flour; 1/2 cup Sweetener (like erythritol or monk fruit); 1/4 cup Coconut Flour; 1 tsp Baking Powder; Pinch of Salt; 4 Eggs; 1/2 cup Butter (melted); 1 tsp Vanilla Extract; 1 cup Desiccated Coconut; 1/2 cup Cocoa Powder; 1 cup Sweetener; 1/2 cup Boiling Water

Who doesn't love a lamington? This Aussie classic is a favourite of many. We thought we would have a go at making a keto version, and we are VERY happy with the results 😍

Ingredients

1 cup Almond Flour
1/2 cup Sweetener (like erythritol or monk fruit)
1/4 cup Coconut Flour
1 tsp Baking Powder
Pinch of Salt
4 Eggs
1/2 cup Butter (melted)
1 tsp Vanilla Extract

Coating

1 cup Desiccated Coconut
1/2 cup Cocoa Powder
1 cup Sweetener
1/2 cup Boiling Water

Directions

Preheat oven to 180°C (350°F).
Line a square baking dish with parchment paper.
In a bowl, mix Almond Flour, Coconut Flour, Baking Powder, and Salt.
In another bowl, whisk Eggs, melted Butter, and Vanilla Extract.
Combine the wet and dry ingredients to form a batter.
Pour into the baking dish and bake for 20-25 minutes or until a toothpick comes out clean. Let the cake cool, then cut into squares.
For the coating, mix Cocoa Powder, Powdered Sweetener, and Boiling Water to make a chocolate sauce.
Dip each square into the chocolate sauce, then roll in Desiccated Coconut. Allow to set before serving.
